Make these cute pancakes for your loved one on Valentine’s Day. They are quick and easy and so light and fluffy. Add in the designs and they become a fun treat for the holiday.
You will need ...
All Purpose Flour, 2 3/4 Cup
Baking Powder, 2 1/4 tsp
Baking Soda, 1 tsp
Salt, 3/4 tsp
Sugar 4 T
Eggs, 2
2% Milk, 1 1/2 Cup
Buttermilk, 1 Cup
Butter, Melted, 5 T
Food Coloring
Mix up the Batter
First, melt the butter
Then, sift the dry ingredients into a large bowl.
Using a whisk, mix in the milks and eggs. Mix until just combined.
Add in the melted butter and mix until combined.
Color the batter
Remove some of the batter and place into a separate bowl. Add in some food coloring to color the small amount. I chose red but you could do pink or whatever other color you prefer. Try not to over-mix the batter when incorporating the coloring. Mix until just combined.
Place the colored batter in a squeeze bottle, a piping bag, or a zip-top plastic bag. Any of these options will work. You just want the colored batter in something that allows you to “draw” with the batter.
Make the design
Heat a skillet to medium heat. If you want to grease the pan, you could do so with a little oil or clarified butter. Regular butter will work too but the fat solids in it will burn after awhile.
Using the colored batter, draw a design on the pan.
Finish the pancakes
Once the design has formed a slight skin on the surface, carefully pour the regular batter on top to finish off the pancake. Wait for bubbles to form on the surface and flip the pancake to finish off the other side.
Now you have a sweet breakfast for Valentine’s Day. If you don’t have enough time to make these on the actual day, you can definitely make them ahead and freeze them. Just let them cool on a rack, then wrap them in plastic wrap and throw them in the freezer. When it comes time for breakfast, pop them in a toaster oven to heat them back up. Please note that they do take a bit to warm up all the way through.
