These heart shaped rice krispie treats are made extra special with a quick dip in chocolate. They of course can be cut into any shape you prefer, but for Valentine’s Day, we made hearts.
You will need ...
Butter, Unsalted, softened, 4 T
Marshmallows, 12 oz
Rice Krispie Cereal, 5 Cups
Semi-Sweet Chocolate Chips, 1 Cup
Heavy Cream, 3 T
Vanilla Extract, 1 tsp
Sprinkles, optional
NOTE:
I doubled the recipe and used a half sheet tray to help form the treats. Be sure to line the tray with parchment and generously grease it with butter to prevent sticking.
Make the Rice Krispie Treats
First, melt the butter in a large pot over medium low heat. Do not let the butter bubble.
Next, pour in the marshmallows and stir to help them melt.
While stirring the marshmallows, add in the vanilla extract.
Once the marshmallows are melted, turn off the heat and pour in the cereal.
Stir until evenly combined.
Form the treats
Carefully pour out the mixture onto the sheet tray. Coat your hands with butter and firmly press down the mixture to compact it into shape. My sprinkle-loving daughter chose to add some crystal sugar to the top of the treats. Let this sit for about 10 minutes to cool and firm up.
Cut out the shapes
Use a cookie cutter to cut out the desired shapes. Be sure to tell your kids to place the cutter close to the edge of the last cut so as not to waste the treats. But of course, they can always eat the scraps, too! Place the cut-out shapes on a rack over a sheet tray.
Melt the Chocolate
While your kids are cutting out the shapes, place the chocolate and cream in a glass bowl. Place the glass bowl over a pot of low simmering water. (Be sure not to heat the chocolate too much as it may seize*). Stir occasionally. Once mostly melted, turn off the heat.
Dip the treats
Once you remove the chocolate from the heat, let sit for about 5 minutes. Then, carefully dip the treats into the chocolate. Place them on the rack. If you want to cover the treat, you can place it on the rack and use a spoon to spoon the chocolate over the top of the treat to coat.
Add some sprinkles
While the chocolate is warm, sprinkle the tops with sprinkles if desired. Let cool on the rack until the chocolate firms up.
These treats will last in an airtight container on the countertop for about 5 days. And yes, you can definitely throw them in the freezer too!
*NOTE:
If your chocolate got too hot and does seize up, remove it from the heat and let cool for about 5 minutes. Then, add in about a teaspoon or 2 of warm water, stirring gently to incorporate. This will bring the chocolate back together and to a smooth consistency. Be careful not to add too much water.
