Quick and Easy Broccoli Cheddar Soup

There’s something about this classic soup that is so comforting.  The creaminess and cheesiness are difficult to pass up.  And you can tell yourself it’s a healthy soup because it is filled with a ton of vegetables!  So go ahead and have two bowls instead of just one.

You will need ...

  • Broccoli, 5 cups
  • Broccoli florets, 2 cups
  • Onion, diced, 1 medium
  • Celery, diced, 1 1/2 Cups
  • Carrots, diced, 1 1/2 Cups
  • Flour, 1/8 Cup
  • Onion Powder, 2 tsp
  • Garlic Powder, 2 tsp
  • Paprika, 1 tsp
  • Cayenne, 1/2 tsp
  • Salt, 1 tsp
  • Pepper, 1 tsp
  • Chicken Stock, 3 – 4 Cups
  • Cream, 1 Cup
  • Butter, 2 T
  • Cheddar Cheese, 8 oz

NOTE: chicken stock can be swapped out for vegetable stock if preferred.

Step One

First, melt the butter in a heavy bottomed pot on medium high heat.  Add in the onions and cook until translucent (about 3-5 minutes).  Stir to avoid browning.  Then add in the celery and carrots.  Cook covered for about 10 minutes or until the vegetables are tender, stirring occasionally.  Add in about half of the stock.  

Then, add in the 5 cups of broccoli and cover to let steam for a few minutes until soft.

Step Two

Remove the pot from the heat.  With a hand blender or a stand up blender, carefully blend the vegetables until smooth.  Return the pot to the stove and turn on low heat.

Step Three

Then, stir in the seasonings.  Add in the flour and stir.  Next, add in the rest of the stock and the cream.  Stir to combine.  Then, add in the shredded cheese and stir until melted and incorporated.

Step Four

Finally, add in the reserved broccoli florets and stir them in.  Let the soup cook on low for about 10 minutes to soften the florets.  

Serve with a sprinkling of pepper and a touch of grated cheese. Add in a slice of homemade bread and you have a hearty meal. Enjoy!
