Fun Earth Day Cupcake Idea

No holiday goes by in our house without some sort of sweet treat.  These Earth Day Cupcakes are a fun way to celebrate.  

You will need ...

  • Chocolate Cupcakes
  • Chocolate Frosting
  • Vanilla Frosting
  • Green Food Coloring
  • Piping Bag

You can make your own cake and frosting, or you can use a store-bought mix.  The point of the treat is the design, not the baking.  So if you don’t have time, don’t stress – just buy the mix and let the kids have fun decorating.

Step One

First, bake the chocolate cupcakes.  Let them cool.  Then, color the green frosting and set it aside.

Step Two

Make the "dirt" by crumbling up some of the chocolate cake. Just keep gently rubbing it between your fingers to break up the cake. Be sure not to apply too much pressure as you want crumbs, not balls of smashed cake.

Step Three

Next, spread the chocolate frosting on the cupcake in an even layer.

Step Four

Next, dip the cupcake top into the cake crumbles.  Pat them down into place.  You can place more onto the frosting if there are areas that are not covered.  It is not necessary to completely cover the frosting as it is brown and will still look like “ground.”

Step Five

Fill the green frosting into a piping bag fitted with a leaf tip. If you do not have these items, you could place the frosting in a zip-top freezer bag (they're a little thicker) and snip the tip at an angle. You will then need to make two short ribbons of frosting to create a leaf shape. Remember: leaves come in all shapes and sizes so anything goes.

Step Six

Repeat this process until you have completed your desired "sprout."

Repeat with all cupcakes and you will have what looks like a garden of plant sprouts.  Perfect for celebrating Earth Day!

NOTE:

If you have chocolate cookies on hand, you can also crumble those up and use them for the “dirt.”
