Mornings can be rushed and crazy. But they are also the best time to fuel up and get in a hot meal before you start your day. For those who want to eat homemade, this waffle recipe is easy delicious. To save time, I make them in bulk and wrap and freeze them individually. When I need one, I just unwrap it and pop it in the toaster for a few minutes and voila! A homemade hot breakfast in under five minutes.
Ingredients:
To yield 10 waffles
All Purpose Flour, 2 Cups
Sugar, 2 T
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Salt, 1/2 tsp
Buttermilk, 2 Cups
Unsalted Butter, melted, 1/2 Cup
Eggs, 2 ea
Note that when you warm them up in the toaster, they won't get too much darker. So, if you like them dark, best to cook them to desired doneness on the waffle iron.
Method:
Sift dry ingredients together in a large bowl.
Mix in buttermilk and eggs.
Slowly mix in melted butter.
Bake on waffle iron using desired setting.
Let cool on wire rack.
Once completely cooled, wrap individually to freeze.
