I have seen so many posts about fall soups. While they look so delicious, I also need something to go on the side. Maybe some fresh homemade bread? Or even better, turn that homemade bread into a perfect grilled cheese sandwich. Because nothing pairs better with fall soup than a perfectly grilled cheese. With a few little added touches, your grilled cheese will be delicious every time.
Using a serrated knife, slice your bread to about a 1/2″ thickness. You don’t want the bread to be too thick otherwise it will over power the cheese and make for a dry sandwich.
Shred the cheese. Sliced cheese also works, but I find the shredded cheese allows you to control the amount of cheese in the sandwich. It is also less processed.
Butter one side of all slices of bread. Be sure to butter generously and all the way to the edges of the bread. Lay them butter side up on a wire rack.
When everything is prepped and ready, heat the skillet to medium heat. Be sure that it is hot before placing the bread slice on it. Once it is ready, place a slice of the bread butter side down on the pan. It should sizzle. Then, place the shredded cheese on the bread. Let sit for a few minutes while the bottom slice of bread cooks.
After a few minutes, carefully tip the bread over a little so you can check the color. If the bread has turned golden brown, then it is ready to flip. Place another slice of bread on top of the cheese, with the butter side up. Use a spatula to carefully flip the sandwich over. Let cook for a few minutes.
Once the sandwich has turned golden on the other side, carefully flip it back onto the first side. Cover the pan with a lid or foil for about 1-2 minutes to help the cheese melt. Remove the cover and remove the sandwich from the pan. Place it on a cutting board to slice in half. Serve immediately. Enjoy!
