Back to School - Make Ahead Breakfast Ideas

School is back in session and busy mornings are in full swing.  If you are trying to feed your kids something more than just a cold bowl of cereal, try these ideas out.  It does take some planning ahead and some time up front, but once your stash is full, you’ll have breakfast options for days.  Then, your kids just select what they want to eat, you heat it up in the toaster oven, and you’re serving up a warm breakfast in minutes.  

Buttermilk Waffles

There’s nothing like a hot homemade waffle to start the day.  These are simple to make and freeze beautifully.  The recipe makes about 20 waffles.  To serve, take them out of the freezer, pop it into the toaster oven for a few minutes, and you’ll have a warm and crispy waffle for breakfast!

Blueberry Muffins

These classic blueberry muffins are always a treat.  Make them ahead and keep them in the freezer.  When you need a quick breakfast, or an after-school snack, pop one in the toaster oven and enjoy!

Protein Rich Egg Cups

These are a great protein packed breakfast option.  While they don’t store in the freezer, they do hold up for a few days in the refrigerator.  Make a batch on Sunday night and you’re good to go for the five-day school or work week.  Just heat one up in the microwave and you’ve got an omelet in minutes.

Chocolate Chip Banana Muffins

My daughter eats these every morning for breakfast.  She pops two frozen muffins into the toaster oven for two minutes, and then she enjoys a banana muffin with gooey chocolate chips.  The texture is similar to banana bread, but its just in muffin form so its easier to transport.

Homemade Pop Tarts

Every kid loves Pop Tarts.  But not every parent loves all the additives in them.  Make these Homemade Pop Tarts and feel better about what your kids are having for breakfast.  Throw them in the freezer and keep a stash of them.  Take one out the night before and let it come to room temperature overnight.  It will be ready to go for breakfast the next morning.
