Who hasn’t gone to a restaurant and given in to ordering the tableside bananas foster dessert? Its a total classic and its not difficult to see why. This recipe combines the classic bananas foster dessert with the equally classic Bundt cake. The sweet caramel sauce, tender bananas, and moist cake all combine for an amazing dessert option.
*OPTIONAL: Caramel Sauce
Preheat the oven to 350 degrees F. Generously butter the Bundt pan. I like to use the butter wrapper to grease a pan - works great!
In a separate bowl, mash the bananas well. I like to use a biscuit cutter to do this. You could use a fork as well.
In the bowl of a stand mixer, cream the butter and sugar together until smooth. Add in the eggs and the vanilla extract. Mix until light and fluffy. Next, add in the baking powder, baking soda, and salt. Then add in half the flour and mix to combine. Add in half the sour cream and half the buttermilk. Mix to combine. Next, add the remaining flour and mix carefully. Then add in the remaining sour cream and buttermilk. Mix until just combined.
Pour half of the batter into the bottom of the Bundt pan. If you are using the caramel sauce, this is when you can add in a generous drizzle of caramel sauce. Then, top the caramel sauce with the remaining batter. Bake in the oven at 350 degrees for about 60-80 minutes, depending on your oven. Check it at about the 60 minute mark by inserting a toothpick into the cake. When it comes out without any batter on it, the cake can be pulled from the oven. The cake will get dark, but that is ok. That is what creates the slightly crispy edges.

Next comes the fun yet tricky part. Be sure to pour the rum into a separate dish. Do not pour it straight from the bottle, especially if cooking over a gas burner or something with a flame. Carefully pour the rum into the pan. Then, use a lighter to light the mixture. The flames will burn for a few seconds, then die out. Let cook for a minute longer, then remove the pan from the heat.
Finally, spoon the bananas foster on top of the Bundt cake. (Be sure to move the cake to the serving platter you will be using before pouring the bananas on top).
Serve up the cake with some extra caramel sauce if you would like. I personally think its moist enough on its own. Enjoy!
