There’s something about this classic soup that is so comforting. The creaminess and cheesiness are difficult to pass up. And you can tell yourself it’s a healthy soup because it is filled with a ton of vegetables! So go ahead and have two bowls instead of just one.
First, melt the butter in a heavy bottomed pot on medium high heat. Add in the onions and cook until translucent (about 3-5 minutes). Stir to avoid browning. Then add in the celery and carrots. Cook covered for about 10 minutes or until the vegetables are tender, stirring occasionally. Add in about half of the stock.
Then, add in the 5 cups of broccoli and cover to let steam for a few minutes until soft.
Serve with a sprinkling of pepper and a touch of grated cheese. Add in a slice of homemade bread and you have a hearty meal. Enjoy!
