Peach Crumble Muffins

August is National Peach Month.  Peaches are so delicate and sweet and versatile.  They can be baked up in delicious desserts, added to salads or savory dishes, and even pureed into yummy drinks!  These peach crumble muffins are a great treat to enjoy for breakfast or a midday snack.  Or even as dessert if you pair it with a bowl of vanilla ice cream!

You will need ...

  • All Purpose Flour, 2 Cups
  • Sugar, 1/2 Cup
  • Baking Powder, 2 tsp
  • Cinnamon, 1 tsp
  • Salt, 1/4 tsp
  • Unsalted Butter, melted, 1/2 Cup
  • Milk, 1/4 Cup
  • Egg, 1
  • Lemon Juice, 1 tsp
  • Peaches, 2-3 peeled and diced

Step One

Preheat the oven to 375 degrees F.

In a large bowl, combine all dry ingredients.  Whisk together.

Step Two

Whisk together the milk and egg.  Add it to the dry ingredients and whisk to combine.  Add the melted butter and whisk to combine.

Step Three

Next, gently fold in the peaches and the lemon juice.  

Step Four

Then, scoop the batter into a lined cupcake tin.  If you wish, you could dot each muffin with a bit of peach preserves for added flavor.

Step Five

Then, make the crumble topping.  

  • All Purpose Flour, 1/2 Cup
  • Brown Sugar, 1/3 Cup
  • Cinnamon, 1 tsp
  • Browned Butter, melted, 3 T

Combine all the ingredients in a bowl and mix together until crumbly.  Portion onto each muffin.  Then, bake the muffins in a 375 degree F oven for about 30-35 minutes (depending on your oven).  The tops should be browned, and a toothpick inserted into the center of the muffin should come out clean.

Step Six

Once the muffins have cooled a bit, you could enjoy them as is.  Or, if you have a sugar loving child at home like I do, you could drizzle a glaze on top by combining 1 Cup of powdered sugar with a few tablespoons of water.  Enjoy!
