To clarify, this is a recipe for banana bread that I just make in muffin form. This is not a muffin recipe with bananas in it. So the texture is like banana bread. And to add a little something extra, I throw in some chocolate. Because, why not?
You will need ...
Butter, unsalted, softened, 1/2 Cup
Granulated Sugar, 1 Cup
Eggs, 2 each
Vanilla Extract, 1 T
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Salt, 1 tsp
All Purpose Flour, 2 Cups
Ripe Bananas, 3 large
Chocolate Chips, 1-2 Cups
Step One
(Preheat the oven to 350 degrees F). In the bowl of a stand up mixer (or in a large bowl if you are not using a mixer), cream the butter and sugar together until smooth.
Step Two
Add in the eggs and the vanilla and mix until smooth.
Step Three
Add in the baking powder, baking soda, salt, and all purpose flour. Mix until just combined.
Step Four
Mash the bananas in a separate bowl. Be sure to mash them well so there are no large banana chunks remaining. A few small ones is just fine. Then, add it to the bowl and mix everything together until combined.
Step Five
Add in the chocolate chips and mix until evenly distributed. Then, portion the batter out into lined cupcake tins. Bake in the oven for about 20 minutes or until the tops are golden brown. Be sure to rotate them halfway through.
NOTE:
These muffins are great warm. You can also freeze them and keep them on hand for a quick breakfast treat or an afternoon snack. Just let them come to room temperature in a few hours, or you can also pop them into a toaster oven to reheat them in a few minutes.
