St. Patrick's Day Lucky Party Mix

We make this sweet white chocolate Chex mix for the holidays, why not make it for St. Patrick’s Day? The magical marshmallows are the key!

You will need ...

  • Chex Rice Cereal, 5 Cups
  • Pretzels, 2 Cups
  • Lucky Charms Marshmallows, about 2 Cups
  • Rainbow Sprinkles, 1 Cup
  • White Chocolate Chips, 12 oz

Step 1 - Melt the chocolate

Place the white chocolate in a glass bowl and set the bowl over a pot of low simmering water.  Be sure that the water is not touching the bottom of the bowl.  Gently stir the chocolate as it melts.  Once the chocolate seems 90% melted, turn off the heat and let the chocolate finish melting.

Step 2 - Prepare the mix

In a large bowl, toss in the Chex cereal and pretzels.  Keep the marshmallows and sprinkles handy to toss in shortly.

Step 3 - Coat with chocolate

Carefully pour the melted white chocolate over the cereal and pretzels.  Toss together with a spatula.  Work quickly as the chocolate will cool and begin to firm up.

Step 4 - Add ins

Quickly add in the sprinkles and toss.  Finally, add the marshmallows and toss to combine.

Let it sit

Spread the mixture onto a parchment lined baking sheet.  Let it sit until the chocolate firms up.

Enjoy!

Now dig in and enjoy!  The mix should keep for about 3-5 days on the countertop is stored in an airtight container.  You can also store it in the fridge for about 2 weeks, or in the freezer for a few months.
